1 cup Roma tomatoes, seeded, and diced
1/4 cup Kalamata olives, pitted and chopped
2 tablespoons fresh basil, chopped
1 teaspoon Kalamata olive juice (from jar)
1/8 teaspoon ground black pepper
2 loaves French bread baguette, sliced 1/4 inch thick
1/4 cup mild goat cheese
1 clove garlic, peeled
Preheat oven 400 degrees. In a medium bowl, combine first 6 ingredients. Set aside.
Arrange bread slices on a baking sheet. Bake for 8 minutes until light brown. Remove toasted bread from oven and cool.
Rub both sides of toast with garlic clove. Spread goat cheese evenly on toast. Top with olive mixture.
