Mango Chile Lime (cold soup)
Serves 4-6
2 cups water
1 each: lemon, lime and orange
1 cup sugar
1 can coconut milk
6 cups mango, peeled and diced
1 tsp red chile pepper flakes
Juice and zest of 2 additional limes
Cayenne pepper and sugar to taste
Peel zest of citrus fruits with a peeler and put in a small pan with the water and sugar. Juice the fruits and add to the water. Bring to a boil and simmer until sugar melts. Let cool. Put coconut milk, mango, chile pepper flakes, and additional lime juice and zest into a container. Strain citrus syrup over and blend with a hand blender until smooth. Check seasoning and add additional sugar and lime juice if you like. Serve cold.
